Easy Homemade Gingerbread Cookies

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 egg
  • 1 cup molasses
  • 1 tbsp apple cider
  • 2 tsp vanilla extract
  • 5 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cloves
  • 1/4 tsp ground nutmeg

Directions

  1. Using a stand mixer, beat butter and sugar together.
  2. Slowly add in the egg, molasses, vinegar, and vanilla and beat on low speed til fully combined.
  3. In a separate bowl mix the dry ingredients and spices together.
  4. Add the dry mix to the molasses mix and beat on low speed until combined into a soft cookie dough.
  5. Cover the dough and chill in the fridge for at least 3 hours and up to overnight.
  6. Once ready to bake, preheat oven to 350.
  7. Divide the dough in half and roll out each half to about 1/4 inch thickness on a lightly floured surface
  8. Cut out cookies and place on lined baking sheets about 1 inch apart
  9. Bake for 8-14 minutes depending on the size of the cookies you cut out. They should spring back when you slightly touch their surface. Be sure not to overbake though, as cookies will become chewy & tough.
  10. Let cookies cool completely before decorating
