Keto Creamy Tomato Basil Soup

Ingredients

  • 3 tbsp butter
  • 1/2 of a large yellow onion, finely chopped
  • 3 cloves minced garlic
  • 1 28oz can Pastene “kitchen ready” tomatoes
  • 2 cans Pastene fire roasted diced tomatoes
  • 2 tbsp Bertolli tomato & basil sauce
  • 3 cups water
  • 2 tbsp chicken granulated boullion
  • Italian seasoning
  • Salt & pepper
  • 1/2 tsp corn starch
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan
  • Fresh shredded mozzarella
  • Fresh finely chopped basil

Instructions

  1. Heat butter in large pot over medium heat.
  2. Add onions & garlic & sauté til golden.
  3. Add the cans of kitchen ready & fire roasted tomatoes to the pot & stir well.
  4. Add the tomato & basil sauce, water, chicken boullion, and seasonings.
  5. Cover and boil for 10 minutes.
  6. Turn heat to low, and using an immersion blender, blend until smooth.
  7. Turn off heat, add the cream & parmesan, and blend again.
  8. Top each serving with fresh parmesan and serve immediately
